Costco Eats: How to Soft-boil Waiālua Fresh Eggs

Costco has been selling Waialua eggs from the North Shore for about six months now. I had been waiting for the relatively new company to roll out (pun intended) their product for several months prior. Imagine my delight to find that not only were the eggs available, they were available at a Costco price!

A couple of things about Waialua Fresh Eggs. First, they’re local. That’s important to me. Jobs are created here, and less transportation goes into distribution. They also serve as a food anchor. The company prides itself on keeping a small environmental footprint, making sure to power their operation through solar energy and recycling its waste as biochar, a highly-sought after source of fertilizer and soil replenisher.

What is an added bonus is that these eggs are superior to the usual chicken egg you get from other vendors. We have been enjoying them as soft-boiled treats. Cooking them in the Instant Pot pressure cooker setting of high for two minutes, venting, then dousing the eggs in ice water produces the perfect texture.
